3 large carrots
1 red pepper
1 red onion
Drizzle of vegetable or olive oil
500 ml carton of passata (or large tin of tomatoes)
1 bay leaf
Pint & a half of water
Fresh coriander
The spices:
half a teaspoon of ginger, nutmeg, cumin, chilli flakes

- Peel and slice the carrots, chop the onion
- Deseed and slice the red pepper
- Drizzle a large pan with the oil and heat on the hob
- Next place the onion, carrots & red pepper into the pan and saute for about 5 minutes or until the vegetables soften
- Add all the spices to the pan and mix together well
- Next add the passata, stir well over a medium heat
- Add the water & the bay leaf and bring to the boil
- Cover and gently simmer on the hob for 30-35 minutes
- Next blitz the soup in a blender or food processor
- Ready to serve with some crusty bread and a sprinkle of coriander on the top.
