50g medium noodles
2-3 tablespoons of Laksa paste (available from Waitrose)
500ml of chicken stock
150g large cooked prawns
Handful of beansprouts
Third of a cucumber
Bunch of coriander
Try replacing the prawns with chicken - works well!

- Cook the noodles according to pack instructions
- Heat a pan, then add the Laksa paste and a little of the coconut milk. After a couple of minutes add the remaining coconut milk and chicken stock, then stir & simmer for a couple of minutes.
- Add the prawns and heat through
- Stir in the beansprouts
- Serve the noodles into two bowls
- Ladle over the soup, then top with cucumber and coriander
