Lemon & Chilli Chicken (serves 4)
4 chicken breasts
4 juicy ripe lemons
8 garlic cloves
1 red chilli, chopped (seeds removed if you prefer)
1 tablespoon honey
4 tablespoons chopped fresh parsley
Salt & freshly ground black pepper

- Heat the oven to 400f, 200c, Gas mark 6 or 180 fan.
- Place chicken breasts in a shallow ovenproof baking dish. Squeeze juice from the lemons and pour into a small bowl. Reserve the lemon halves.
- Remove the skin from 2 of the garlic cloves, crush them and add to lemon juice with the chilli & honey. Stir well and pour mixture over the chicken, tucking the lemon halves reserved earlier around the chicken breasts. Cover & leave to marinate for at least 2 hours, turning once or twice.
- Make sure the chicken breasts are skin side up and place lemon halves cut side down and add the remaining whole garlic. Roast in the oven for 45 minutes or until golden brown and tender.
Stir in the parsley, taste and season – ready to serve.
