Salad Nicoise (serves 4)


2 small gem lettuces
1 bag of mixed salad
2 tins of tuna in oil
4 hard boiled eggs – cut into quarters
4 large vine-ripened tomatoes
12 new potatoes, cooked & cut into quarters
110g Fine beans, simmer for about 4 mins until just done
8 kalamata olives
about 12 marinated anchovies

For the dressing:

6 tablespoons olive oil
1 teaspoon Dijon mustard
2 tablespoons white wine vinegar
Salt & pepper

  • Place the torn salad leaves into a very large serving dish
  • Drain the tins of tuna & flake onto the salad leaves
  • Next add the potatoes, eggs, tomatoes, beans, olives & anchovies
  • Next place all the ingredients for the dressing into a bowl, season with a little salt & pepper and whisk
  • Pour over the salad and serve

Serve with crusty french bread
