Sausage Casserole (serves 4)
8 good quality Gourmet Sausages
1 tablespoon of olive oil
1 onion, chopped
2 garlic cloves, crushed
1 red pepper, chopped
6 chestnut mushrooms, sliced
4 sundried tomatoes, chopped
1 glass of red wine
Carton of passata
1 teaspoon of sugar
Half a teaspoon of paprika
Bunch chopped basil
- Gently fry or grill the sausages in a large pan in the olive oil until golden brown (or cook in the oven until brown)
- Remove the sausages and keep to one side. Next, fry the onion & garlic until softened. After 5 minutes add the red pepper, mushrooms and sundried tomatoes, cook for a couple of minutes. Then return the sausages to the pan & season.
- Turn the heat up high, add the red wine and cook for a few minutes to reduce.
- Next add the passata, sugar, basil, paprika and SIMMER for 30 minutes.
Serve with your choice of potatoes & green vegetables. This dish also goes well with pasta or crusty bread.
